Minced turkey is rather inexpensive and accessible at your local grocery store by the pound.
I mix in minced onions, garlic, worcestershire, hoisin sauce, cilantro, chopped button mushrooms, minced ginger, flax seed, and an egg to bind all ingredients together.
The mango slaw can be assembled with diced mango pieces, cilantro, cucumber, shallots, shredded purple cabbage, and diced tomatoes.
Serve with sliced avocado, rye bread, grainy Dijon mustard, and more cabbage and cucumber pieces.
