I am super inspired by colourful meals and this taco variation is no exception to that. I used blue corn tortillas, which are higher in protein content and lower on the glycemic index (which means they just won't make your blood sugar levels drop.)
I love eggs as my breakfast choice of protein and as scrambled as they come in my frying pan. I sprinkle chili powder and paprika to add some extra zesty flavouring. Top with shredded carrots, diced tomatoes, half a monster kale leaf and shredded basil leaves.
