Breakfast Tacos (with blue corn tortillas)

I am super inspired by colourful meals and this taco variation is no exception to that. I used blue corn tortillas, which are higher in protein content and lower on the glycemic index (which means they just won't make your blood sugar levels drop.)

I am super inspired by colourful meals and this taco variation is no exception to that. I used blue corn tortillas, which are higher in protein content and lower on the glycemic index (which means they just won't make your blood sugar levels drop.) 

I love eggs as my breakfast choice of protein and as scrambled as they come in my frying pan. I sprinkle chili powder and paprika to add some extra zesty flavouring. Top with shredded carrots, diced tomatoes, half a monster kale leaf and shredded basil leaves.

  • farm-fresh eggs
  • sour dough bread
  • choice of hummus
  • sprouts
  • grapefruit or other citrus fruit

I always have a surplus of onions, carrots, potatoes, garlic lying around as well. I made a quick stirfry with these veggies including the fronds of the carrots that I simmered in some stock and olive oil.

Top up your lovely creation with a homemade pesto (I made a basil + flax + garlic variation here) or cilantro and serve warm.
